Amount là danh từ đếm được, có nghĩa là số lượng. Amount có thể đứng một mình mà không có of.
E.g:
Small amounts of milk were used for making cakes. (Một lượng nhỏ sữa đã được sử dụng để làm bánh.)
The total amount raised so far is approaching 5 million. (Tổng số tiền quyên góp được cho đến nay là gần 5 triệu.)
The amount of + danh từ không đếm được
E.g: The amount of water you should drink per day is 2 liters. (Lượng nước bạn nên uống mỗi ngày là 2 lít.)

Quantity of là loại từ thuộc dạng cụm danh từ + giới từ, có nghĩa là một lượng hoặc một số lượng gì đó. Theo sau quantity of là cả danh từ đếm được dạng số nhiều (thêm s/es) và danh từ không đếm được. Ví dụ: a quantity of lessons, a quantity of milk. Thông thường, Quantity of dùng để chỉ vật.
