Mô Tả Công Việc

WHAT YOU WILL GET:
We are looking for a passionate and motivated professional Head Chef to join The Cocoa Project team. Your role will create incredible cakes, breads, and chocolate applications, express the beautiful flavor experience and wonderful stories of each product to the customers. Besides, you also have to ensure they meet the highest standards of taste, texture, and quality. You will collaborate with cross-functional teams, conduct research, and leverage your expertise to develop innovative applications for our chocolate, cake, and bread products of The Cocoa Project, and assist to contribute to the overall success of the chocolate production operations, as well as the purpose of The Cocoa Project which is to bring chocolate to the people and build a culture of chocolate in Vietnam.

KEY RESPONSIBILITIES:
1. Kitchen management
‒ Report directly and support Production Manager with Kitchen operations.
‒ Follow, and arrange the shift assignment, opening, and closing procedures alongside company standards.
‒ Perform daily tasks for pastry products, chocolate tablets, and chocolate creations, care for equipment, and report on daily work progress.
‒ Supervise the kitchen team to timely prepare ingredients and products as per the plan
‒ Attention to detail to ensure a consistently high standard of chocolate creation/making and delivery of the best quality product to the customers.
‒ Ensure all products are served perfectly throughout the operation and provide feedback where appropriate.
‒ Be the main person to answer customer questions regarding chocolate products and encourage knowledge sharing among the team.
‒ Maintain quality standards for chocolate, cake, and bread applications
‒ Collaborate with quality control teams to conduct regular product testing and analysis
‒ Address and resolve any quality issues in a timely manner
‒ Demonstrates integrity, honesty, and knowledge that builds the company culture, value, and mission of The Cocoa Project.
‒ Together with Marketing and Sales to develop chocolate workshop/ class content and curriculum for chocolate development, chocolate/cake practical classes to customer
‒ Conduct hands-on workshops, demonstrating techniques in chocolate making
‒ Provide guidance and mentorship to participants during workshop sessions.
2. Product application development
Research and innovation:
‒ Stay updated on industry trends, market demands, and emerging technologies;
‒ Conduct research on ingredients, processes, and technologies relevant to chocolate, cake, and bread production
‒ Propose and implement innovative solutions to enhance product offerings.
Product formulation:
‒ Develop and optimize recipes for chocolate, cake, and bread products based on product development schedule and procedure
‒ Conduct sensory evaluations to ensure product excellence in taste, texture, and appearance
‒ Training the new products to production teams to create unique and marketable product offerings
‒ Continuously improve and optimize existing product formulations for taste, quality, and cost-effectiveness
‒ Provide the product guideline, product standard and product production for customer tasting event based on confirmed schedule;
‒ Internal training before customer tasting if need
Documentation
‒ Maintain accurate records of formulation, testing, and research activities;
‒ Create comprehensive documentation for new product development projects: cost price, recipe instruction, product standard… that meet company’s requirements.

Yêu Cầu Công Việc

REQUIREMENTS AND QUALIFICATIONS:
• At least 5 years in the Head Chef position and 2 years in the Application Development position.
• Relevant certification in Chocolate / Pastry.
• Experience in chocolate production, making and product development, along with a sound understanding of chocolate, flavors, and textures.
• Ability to create and deliver excellent products that meet/exceeds customer expectations.
• A passion and love not just for chocolate, but for culinary arts in general.
• Act as a brand ambassador and manage The Cocoa Project’s brand image towards our customers;
• The ability to multitask and work under pressure and work for long hours in a heated environment.
• Honest, responsible, ability to maintain trained working procedures by the leader.
• Ability to work shifts and overtime.
• Flexible and can-do attitude, continuous improvement spirit.
• Strong communication, time management and strong teamwork skills.
• English skills.
• Presentation, training skills and teaching or workshop facilitation experience is highly desirable.
• Familiarity with industry regulations and quality standards.
• Good computer skills, including experience with Microsoft Office Suite;

BENEFITS AND ALLOWANCE:
• 12 days of annual leave + 01 leaving on the birthday
• 8 hours/day (30mns break included and added to salary)
• 6 days per week, 26 days/ month, work by shift
