- Responsible for coordinating, supervising and directing all F&B department, outlets operations while maintaining a profitable F&B department and high quality products and service levels.
- Assist F&B Director in market creative ideas to promote business; maintain revenue; recommend & develop F&B budgets and meet budgeted productivity while keeping quality consistent with Naman Retreat Standard.
- Assist in ensuring effective recruitment, induction and training program within the department
- Responsibility to regular training, goals and incentive programs are carried out and all staff receive feedback on performance
- Training the staff to the excellence services with also on the job training. Ensure minimum of 7 hours per staff per week of training will have to be carried out with training attendance record
- Assist in collating and update training manuals for all positions in the department
- Communicate with Outlet Manager regarding changes and daily operational needs - Assist in enforcing safety/security aspects in the department
- To manage outlet manager, supervisors and staffs in a fair and just manner but should be firm in decision making
- Ensuring staff hygiene and professional appearance is maintained - Ensure effective communication within the department and the hotel
- To communicate with maintenance to ensure all repairs are attended to - Liaise with all departments regarding guest information, special requests, VIP’s -Ensure contact is possible with the F&B department throughout the day
- To handle any guest complaints effectively - Be responsible for meeting and talking with the guests at all times and lobbing of comments from them
- Assist in implementing budget and controls - Assist in controlling staffing levels in relation to payroll and budget
- Assist with ordering and controlling operating equipment and supplies
- Ensure issues to other departments authorized and recorded and charged as required
- Curbing wastage in all areas
- Maximizing profitability of the outlet by increasing turnover & minimized operating costs without affecting the quality of the service and products
- Prepare monthly F&B reports to F&B Director
- Ensuring monthly stock take completed timeously
- Assist in controlling and updating budgets as required
- Ensuring POS procedures adhered to
- Ensuring end of day functions on POS completed
- Ensuring food and beverage charges for function billing correct
- Ensuring all ideas of parties, events, promotion programs must be follow and well organize up to expectation of requirement of F&B Director
- Ensuring efficient and effective F&B operations in all outlets and function areas
- Ensuring all F&B areas are served, checked daily and meet set standards
- Ensuring F&B areas are cleaned and items stored after shifts as required
- To maintain general cleanliness and order in the department and hotel

- At least five years in Supervisory / Managerial position in 4/5 stars Hotel
- Cultural level: University - Majority: Hospitality restaurant and bar management
- Certificates: English & Computer skill
