• Provide functional assistance and direction and be responsible for the smooth running of the whole stewarding operation
• Supervise the duties of all stewarding department employees, facilities, operation and costs
• Supervise the sanitation, cleanliness, hygiene as well as the quality level of product and services
• Check more specifically the proper use of chemicals and washing accessories
• Coordinate with the Executive Chef in establishing minimum and maximum operating par stocks and supplies and approve storeroom requisition
• Co-ordinate with the Food & Beverage Manager or Outlet Manager to check their requirements for the day and the next day
• Maintain health inspection record, attendance record and file on casual employees
• Take all necessary actions to reduce the loss of silverware / flatware
• Operate in a safe and environmentally friendly way to protect guests’ and employees’ health and safety, as well as protect and conserve the environment
• Comply with the hotel environmental, health and safety policies and procedures

• Required Skills

- Understanding of F & B and hotel industry and products Qualifications

- Document Writing Skills and Hotel Competency

- Knowledge of hygiene standards, kitchen operations and safety standards for handling food

- Foreign Language(ENG required, second language preferred)
