• Ensure the function of Mezz restaurant, Canteen and Asian Banquet Kitchen, facilities and cost;
• Control and analyse on an on-going basis;
• Responsible for the preparation, production, presentation of food in the outlets in charged / banquet events and ensures highest quality at all times;
• Responsible for the preparation of menus under the direct supervision of the Executive Chef or Executive Sous Chef;
• Produce up to date Banquets Food standard Recipe file for all food items on the menus and system;
• Interview potential candidates, select and propose for Executive Chef or Executive Sous Chef’s approval, perform appraisal, orientation and suspension if required.

• Formal culinary education or equivalent certificate;
• Experience working in international settings, particularly in hotels, is highly desirable;
• Expertise in Asian cuisines and Western, cooking techniques ingredients, and flavors;
• Strict adherence to food safety and sanitation standards;
• Fluency in English and office computer skills;
• Strong leadership skills to manage and motivate a diverse team of chefs and kitchen staff;
• National under local contract (Vietnamese candidate only).
