• Supervise daily butcher operations, ensuring proper cutting, portioning, preparation, and storage of meat, poultry, and seafood in line with quality and hygiene standards.
• Ensure compliance with food safety, hygiene, and sanitation regulations (HACCP and local regulations).
• Monitor receiving, inspection, storage, and rotation of all butcher products to ensure freshness, quality, and cost control.
• Manage inventory levels, minimize waste, and control food cost through accurate portioning and yield management.
• Train, coach, and supervise butcher team members to ensure high performance and skill development.
• Coordinate closely with Kitchen, Purchasing, Stewarding, and F&B teams to ensure smooth daily operations.
• Ensure all equipment and tools are properly used, cleaned, and maintained.
• Maintain cleanliness, organization, and safety of butcher areas, cold rooms, and storage facilities.
• Handle special requests, banquet preparations, and high-volume production efficiently.
• Prepare daily production plans, reports, and inventory records.
• Support Executive Chef and Executive Sous Chef in achieving quality, hygiene, and cost objectives.
• Perform other duties as assigned by Management.

• Diploma or vocational qualification in Culinary Arts, Food Processing, or related fields.
• Minimum 3 years of experience in butcher operations, preferably in luxury hotels, resorts, or high-volume kitchens, with at least 1–2 years in a supervisory role.
• Strong knowledge of meat cutting techniques, portion control, yield management, and food safety standards.
• Good leadership, training, and team management skills.
• Good understanding of HACCP, hygiene, and sanitation standards.
• Good communication skills; English is an advantage.
